Yes, the title of my blog is a bit strange. Why you may ask did I title my blog this. Well I have often thoght about that chicken standing in the middle of the road and I had to swerve out of its way. I always seem to be encountering 'chickens' in the road of my life. Just when I am riding life's highway some big challenge comes and blocks my way in life. Sometimes I have to sit there and wait until it passes and be patient, and other times I manage to swerve around it and figure out how to deal with the block quickly. And then there are times that my rebellious side slams on the gas and drives right through it, haha

Halloween This And That Popcorn

Mix together in a large bowl:
1c. Popcorn kernels popped
3c. Mini marshmallows
Halloween candy mix: gummy candy, candy corn, pumpkin candy corn, orange and black jelly beans, etc. (I find this usually in the bulk section in the grocery store)
1c. Salted peanuts

1c. butter (melted) in a sauce pan
add: 1/3 c. sugar
        1/2 c. corn syrup
Bring to boil. Simmer for 3 min.
Pour over popcorn mix. Sauce will thicken as it cools. Enjoy!



Homemade Creamy Chicken Noodle Soup   (My family LOVES this recipe!)

Noodles: 1c. flour                  1 egg
1 tsp. salt

Combine ingredients. Add water. Roll thin. Slice and boil. ( I use a pizza cutter to cut thin strips about 1/4 in. or less is best) These noodles are what makes this soup so tasty!
Soup:
3-4 chicken breast (boneless, skinless)
2-3 chicken bullion cubes
1 can cream of chicken soup
1 c. diced celery
1/4 onion optional
2 c. baby carrots or diced carrots
Salt and pepper to taste

In a large sauce pan, Boil chicken. Take out of water and cool and dice. Add noodles, bullion cubes, carrots, onion and celery to water. Boil until noodles are done and vegetables are tender. Add chopped chicken, cream of chicken soup, and salt and pepper.
